Aloo Potaler Dalna – Aloo Parwal Curry

Aloor Potaler dalna or Aloo Parwal curry is very famous in Bengalies ,they love it and have it with hot white rice . They also love parwal bhaja or potol bhaja . Below I am presenting recipe from My mother , We love it and i am sure you will surely love this .  
  Serves : 10
  • 1½ Kgs          Parwal  (pointed gourd) scraped and cut into half pieces (1 into 2)
  • 2 Medium     Tomato chopped
  • 1¼ Cups       Water
  • 3 Tbsp           Coriander Powder
  • 2 Tbsp           Cumin and fenugreek (Methi) seeds
  • 10 Gms         Ginger
  • 6 Tbsp          Mustard Oil
  • 5 Medium or 500Grm   Potatoes  peeled and cut into 4 pieces a potato
  • 2                     Bay Leaves
  • 1½  Tsp        Turmeric Powder
  • 3½ Tsp         Red Chilli powder
  • 1 Tsp             Garam masala powder
  • 3½ Tsp        Salt or add as per taste 
  • 1 tbsp          Coriander leaves

Method :

  1. Grind the ginger and make ginger paste
  2. Take oil in a pan and heat it
  3. Add cumin & fenugreek seeds with bay leaves in hot oil
  4. Fenugreek color changed to brown , add potato and parwal to fry
  5. When vegetables colors turn into golden brown
  6. Add chilli powder ,coriander powder and salt
  7. and fry the masala
  8. Now add tomato and ginger paste and fry for 4-5 mins
  9. add garam masala and water
  10. cover it with a lid for 15-20 mins
  11. curry is ready add chopped coriander to garnish and serve
