Baingan Bharta

Baingan bharta or Baingan ka bhurtha or Baingan da bhurtha or begun pora or Wangyacha Bharit is a South Asian dish . Baingan bharta is a part of the national cuisines of both India and Pakistan.  There are two variant in Baingan Bharta fried and roasted. Presenting easy and Roasted Baingan bharta .
Prep Time: 10 minutes Cook Time: 15 minutes Serves: 4 people   Ingredients :
  • Large eggplant - 2
  • Large onion - 2 finely chopped
  • Large tomato  - 1 chopped  fine
  • Green chillies - 2 chopped  fine (optional)
  • Coriander leaves - 2 tbsp chopped fine
  • Mustard oil - 4 tbsp
  • Salt to taste
Method :
  • First rinse the baingan or eggplant in water.
  • Brush baingan or eggplant with oil and roast it on a gas burner over medium heat.
  • Keep turning and cook it till all the skin on the eggplant become black and the inner flesh looks really soft.
  • Once the baingan or eggplant is roasted, allow to cool fully and then peel off the black skin.
  • Mash the baingan or eggplant roughly in a mixing bowl.
  • Add the mustard oil, onion, tomato, green chillies, coriander leaves and salt to taste. Mix well.
  • Baingan ka bharta is ready.  Serve Baingan Bharta with chapatis, paratha or phulkas .
