Bengali Dimer Dalna (Egg Curry)

Dimer dalna is the Bengali traditional egg curry . There are many variations to this recipes, I m going to describe the one that we follow at home. [nggallery id=12] Ingredients :-
  • Egg - 8
  • Potato Cubes - 2 to cups
  • Turmeric Powder - 2 tsp
  • Salt to test
  • Oil - 1/2 cup
  • Red Chilli - 2
  • Bay Leaf - 1
  • Garlic Past - 1 tsp
  • Ginger Past - 1 tsp
  • Chilli Powder - 1/2 tsp
  • Cumin Powder - 1 tsp
  • Bengali Garam Masala - 1/4 tsp
  • Cilantro - 1 tsp
  •  Tomato - 1
  • Cumin seeds - 1/2 tsp
  • Onion - 2
How to make Bengali Dimer Dalna (Egg Curry)  :-
  1. Take eight eggs and potato
  2. Put the eggs and potatoes in water and make it boil for 10 minutes..
  3. Then, cool the eggs  and peel them off.
  4. In the mean time, skin the potatoes
  5. Cut them in 1/2 inch cubes.
  6. Cut the tomato into small pieces.
  7. Heat 6-7 tablespoons of oil in a big saucepan or stockpot.
  8. Fry the eggs with constant stirring for about 2-3 minutes
  9. When the eggs take on red color, set them aside.
  10. In the same pan add another tbsp of oil
  11. Add 2 dried red chilies, broken into 2 halves
  12.  A few cumin seeds into hot oil.
  13. One Indian bay leaf, broken into 2 pieces.
  14. Put the boiled potatoes
  15. Stir for a minute.
  16. Add chopped onion.
  17. Add  cumin powder.
  18. Chili powder.
  19. Sufficient amount of salt and little bit of turmeric.
  20. Stir for 6-7 minutes, then add the tomato.
  21. Add  garlic past.
  22. The  ginger past.
  23. Stir for 3-4 minutes more till fry.
  24. Then add add the fried egg.
  25. Add 1 cup water.
  26. Stir to mix and leave aside
  27. Get your chopped cilantro ready for garnishing as the last step
  28. The curry should be boiling
  29. Stir
  30. Cover
  31. Boil for another minute
  32. Add 1/4 tsp of Bengali garam masala
  33. Finally the chopped cilantro.
  34. Turn off the heat and let the curry cool down.
Serve the Bengali Dimer Dalna (Egg Curry) hot with hot steamed rice or chapattis. :) :D
