Chashni is the common name of sweet sugar syrup used for many different sweet items in India, Pakistan, Nepal and Afghan like Rasgulla , jalebi and other sweets recipes . The syrup is usually thin or thik according to recipe to allow some swirling, and can have several flavors incorporated in it, such as rose, Cardamom or saffron. Different recipes may need different level of thickness .
- Water - 1 cup
- Sugar - 1 cup
- Cardamom pods - 3 to 4
- In a small saucepan, bring sugar and water to a boil over high heat.
Once syrup comes to a boil, lower down the heat to medium flame .
- When the syrup to get one thread consistency then turn the heat off.
- Now add 3-4 cardamom pods, slightly crushed .
- Now sugar syrup is ready.
