Simple Chicken Biryani

Biryani is a mixed rice dish from South Asia. It is made with spices,herbs, rice and mutton/chicken or vegetables. It is very popular in India specially in  Hyderabad ,Andhra Pradesh ,Telangana . Hyderabadi Biryani is world famous . Everyone want to cook this divine non-veg food item but looks to hard ,and they think How to prepare Chicken Biryani in a ease . Here i am making chicken Biryani which is easy and home made so any body can try and enjoy it at home .
  Preparation Time : 30-50 minutes Cooking time : 30 -35 minutes Servings : 3 Ingredients:
  • Chicken with leg pieces  - 500 grams
  • Basmati or any good Rice -  1 1/2 cups
  • Curd - 1/2 cup
  • Oil  - 4 tbsp
  • Cinnamon -  1 inch stick
  • Bay leaves - 2
  • Cloves -  10
  • Star Anise (Badiyan or Chakri Phool or Anas phal) -2
  • Cumin seeds - 1 tbsp
  • Green cardamoms -  6 to 7
  • Onions - 2/3 finely chopped
  • Green chillies -5 to 6
  • Turmeric powder - 1/4 tbsp
  • Tomatoes - 2 chopped
  • Salt to taste
  • Ginger paste - 1 tbsp
  • Garlic paste - 1 tbsp
  • Red chilli powder - 1/2 tbsp
  • Onions sliced long for fried brown - 3
  • Garam masala powder 1/2 tbsp
  • Bunch of Fresh mint leaves
  • Bunch of Fresh coriander leaves
  • Rose water 2 tsp
  • Biryani masala powder - 2 tbsp
  • Eggs boiled 2
  • First boil rice 80%  and set aside.
  • Now add oil to kadai and fry onion on medium flame till it turns golden brown and keep aside .
  • Heat oil  add cinnamon, bay leaves, cloves, cumin seeds, green cardamoms and sauté for half a minute.
  • Add sliced onions and sauté.
  • Add  green chillies and chicken pieces and continue to sauté.
  • Add turmeric powder , tomatoes and salt and mix.
  • Add ginger-garlic paste, red chilli powder and curd and mix well then cover it for 5 to 10 minutes.
  • After 10 to 15 minutes open the lid, now you can see lots of water came from the chicken.
  • Add geram masala powder
  • Evaporate all the excess water and stir fry till oil comes out from the chicken and chicken boiled to 80% . Turn off the flame .
To layer the Biryani:
  • Now heat 2 tablespoon of oil or butter in a Pressure Cooker.
  • Now add some of the portion of the 80% cooked chicken pieces to the Pressure Cooker and spread it to all over the base of cooker.
  • Put 75 % cooked some amount of rice on top of this layer and spread all over the chicken .
  • Spread the fried onion over the rice
  • Then add mint leaves, coriander leaves, biryani masala powder and rose water on the rice.
  • Add remaining rice, mint leaves, coriander leaves, fried onion, shahi biryani masala powder and rose water layer by layer and cover the vessel with a lid (don't allow pressure to go out).
  • Follow above process till cooker not 85% full or till over your all rice and chicken
  • Reduce flame and cook for 15 to 20 minutes.
  • Now quick chicken biryani is ready to serve, serve with raita ,green chutney and curry .
  • Decorate with boil eggs ,salad remaining fried onion and mint and coriander leaves .
