Noodles are very common and quick fast food recipe in this modern era . We can not say it is healthy but Quick and easy . Egg Noodles is an Indo-chinese food. Adult and children ,all love it and can enjoy any time . We mostly use to make and have it at Breakfast time . We can find such tasty egg noodles , chicken noodles & veg noodles at road side vendor (Street food stalls) . We can make it in our home as well with some new twist and taste . Let’s see how i make egg noodles instantly and easily .

Serves : 3

Ingredients:

  • Noodles – 1/2 kg
  • Green Chilly (cut in julienne) – 2 to 3
  • Tomato (cut in julienne) – 2
  • Ginger (cut in julienne) – 1 inch
  • Garlic (cut in julienne) – 3 to 4
  • Soy sauce – 3/4 tbsp
  • Chili Sauce – 1 tbsp
  • Vinegar – 1/2 tbsp
  • Salt to taste
  • Black pepper powder – 1 tbsp
  • Tomato sauce -2 tbsp
  • Onion (chopped) – 3
  • Eggs – 3
  • Oil -4 tsp
  • Italian seasoning – 1/2 tsp (Optional)

Method :

  • Boil water in a pan with 2 tsp of oil and 1 tsp of salt.
  • When water starts boiling add the noodles and check if its cooked then drain the water,  wash the noodles with cold water and keep the noodles aside.
  • In a pan, heat 4 tsp of oil  & add chopped onions, green chilly, ginger, garlic and saute until onions turn little brown.
  • Now add chopped tomatoes, salt and cook until tomatoes become mushy.
  • Then break the eggs one by one and stir vigorously with a spatula till the egg is completely cooked.
  • Now add boiled and drained noodles to the pan and mix well.
  • Then add vinegar, soy sauce, chilly sauce and tomato sauce and mix well. And sprinkle pepper and salt.
  • Give everything a nice stir or toss.
  • Egg noodles is ready.
  • Sprinkle Italian Seasoning on it (Optional)
  • Serve hot with ketchup.
