Papdi Chaat

Papdi chaat is very tasty and everyone loves to eat it. Papdi chaat is a very famous street food (Indian road side vendors). It is available in every corner of each street of the city . It is mainly made in parties and street chaat corners by Chaatvalas  . Dahi (curd/yogurt)  and papdi (fried puri) are important part of many mouth watering chaat recipe in India.  
  Preparation Time:  Makes 4 servings Ingredients: For papdi :
  • Plain flour / Maida - 1 cup
  • semolina (suji) - 1 cup
  • Salt to taste
  • Oil for deep fry
For papdi chaat: Method : For Papdi :
  • In a bowl add the three ingredient and mix well.
  • Add just a little water at a time and knead to get smooth dough.
  • Cover with a damp cloth and allow to rest for 20 minutes.
  • After the dough has rested, divide it into equal-sized balls like puri balls.
  • Roll out into a small ball. Prick with a fork all over other wise it will fry as puri not papdi . Repeat till all the dough is used up.
  • Heat oil for deep frying, in a deep pan on a medium flame. When hot, add the Papdis a few at a time and fry till crisp and pale golden.
  • Drain and keep on paper towels. Repeat till all Papdies are made. They can be stored for a few weeks if kept in an airtight container
For Papdi chaat / To Serve :
  • In the curd add black salt , sugar* and mix well. Now curd is ready for papdi.
  • First crushed papdi and arrange them on a serving plate.
  • 5 tbsp curds, 2 tbsp  imli ki chutney and 1½ tbsp green chutney.  Measurement may vary as per your taste
  • Sprinkle a little black salt, ¼ tsp chaat masala, ¼ tsp roasted cumin seeds powder and ¼ tsp chilli powder over it
  • Papdi Chat is ready
  • You can add sev , anardana ,boil and mashed potato etc as well if you want and like * .
  • Serve as soon as possible or the Papdis will get soggy.
