One of the most important elements to Indian cooking is Chutney. Every region has its own method, variation. Peanuts in addition to being extremely versatile and tasty also pack a nutritional punch and are a good source of monounsaturated fats that are good for heart health. They are also good sources of Vitamin E, Niacin, Folate , Protein and Manganese. Ingredients:
- Fresh coriander leaves - 1 bunch (chopped)
- Garlic cloves - 5 to 6 cloves
- Green Chillies - 5-6 (or to taste)
- Salt – as per taste
- Roasted peanuts - 1/4 cup
Dry roast the peanuts in a skillet and green chilli. Takes around 1-2 minutes.
In a blender add coriander leaves, roasted peanuts, green chilli and blend.
Add garlic and salt. Blend till smooth.
Add a little water in case the mixture is too thick.
Put it in a bowl.
Now the all time favorite coriander chutney is ready.
