Sabudana Vada – Sago Pakora

Sabudana vada or pakora is very popular Indian recipe made during fasting days like Navaratri, Mahashivratri or ekadashi as well as normal days . Sabudana vada is crispy  pakora which made with boiled mashed potatoes, sabudana,  peanuts and salt. Sabudana vadas are crunchy and simply melts in mouth. It is served with  green chutneytamarind (imli) chutney, tomato sauce  and along with hot tea or coffee. Soaking Time: Minimum 2 hrs up to 8 hrs Prep Time:  20 minutes Cooking Time: 30minutes Serves: 4-5   ↓↓
  • Sabudana (small tapioca pearls) - 1 cup
  • Potatoes( boiled) - 2 large
  • Peanuts (roasted and coarsely crushed) - 1 and 1/2 cup
  • Sesame Seeds - 1 tbsp
  • Green Chilli( finely chopped) - 2
  • Ginger( grated) - 1/2 tbsp
  • Coriander Leaves (finely chopped) - 1 and 1/2 tbsp
  • Cumin Seeds - 1/2 tbsp
  • Garam Masala Powder - 1/4 tbsp
  • Salt to taste
  • Oil for deep fry
  •  Water (to soak sabudana) - 1/4 cup


  • Wash sabudana. Drain & keep aside for aleast 2 hours. otherwise it will not be soft from inside. If necessary, sprinkle a little water to moisten sabudana.
  •  Boil & mashed the potatoes. Do not over boil potatoes, otherwise they will be too sticky.
  • While sabudana is draining, dry roast peanuts in a pan on medium heat. Let them cool and grind into a coarse powder
  • Take sabudana, boiled potatoes, coarsely ground peanuts, ginger, green chilies, sesame seeds, cumin seeds, salt, garam masala and coriander leaves in a bowl.
  • Mix all ingredients well and make a soft dough like mixture.
  • Keep the oil in pan and allow to get heated.
  • Divide the mixture into equal portions. Apply little oil on plam & shape each portion  into a round & flatten slightly.
  • Add vada one by one and fry them until to golden and crisp on low flame. It will take approx. 4 to 5 minutes to cook.
  • Remove and place it on paper towels.
  • sabudana vadas are ready.  serve them hot with tamarind (imli) chutney, green chutney and tomato sauce .
Tips :
  • When you are frying the vadas  it may crack in oil then you can even add 2 tsp of rice flour while mixing .
  • Take care while adding water to soak sabudana  if you add more water then it will become mushy.
  • Take care while frying the vadas ,Hot Oil may hurt you.
